Sushi: Brown rice, Quinoa and Roasted Veggies

Crafty little Coco



  • 2/3 cupshort-grain brown rice
  • 2 1/3 cupswater
  • 1 pinchsea salt
  • 2 tablespoonsrice vinegar
  • 1 tablespooncider vinegar
  • 4 tablespoon of Hoisin sauce
  • 2 tablespoon Sriracha.
  • 1 tablespoon of Aminos.
  • 4 tablespoon of soba tsuyu.
  • 2 tablespoonsturbinado sugar
  • 1/2 teaspoonsea salt
  • 1/2 cupquinoa
  • 4 sheetsnori (dry seaweed)
  • 1/2 purple carrot, thin strips
  • 1/2 persian cucumber, thin strips
  • 1 tomato – sliced. 
  • 4 Basil leaves.
  • 1/2 block of tofu- strips.
  • 3 cloves of garlic- think slices.
  • 1tablespoon sesame seeds.

secret goodiesBegin with cooked brown rice and quinoa (let me know if you need help with this.) Combine both the rice and quinoa in a large bowl. In a seperate bowl mix rice vinegar, cider vinegar, sugar, and sea salt until sugar is fully dissolved. Then add liquid to rice. Mix it in while blowing, we want it to cool down.
